Elizaldia Ham complies with the Bayonne Ham charter: the curing is carried out in the Adour basin and the pigs come from farms in the South-West. The products are produced on site at Gamarthe in the Basque Country!  Salies de Béarn salt is used for the salting process. Curing lasts 12 to 16 months, giving the meat a fragrant flavour and a texture that melts in the mouth.
