Each piece is salted and winged by hand. The cooking is perfectly controlled to preserve the flavours and texture. The ducks are raised in the open air on their family farm in Irrissarry, fed on GMO-free corn and sunflower. The confits are prepared in their home kitchen in Ossès according to a traditional and unchanging know-how.
Tasting advice: We advise you to remove the duck fat from the confit. The confit is already cooked, there is no need to re-cook it for too long. Reheat it in the oven at 180° for 20 minutes. As soon as the skin becomes golden and crispy, it is ready.
