They are called "chipirons" (in Basque), or Calmars or Encornets. These squids prepared in their ink very often served with boiled rice, are a traditional dish from St Jean De Luz. Feel free to add a spoonful of Armagnac, a teaspoon of Jeiki sauce, some Espelette chili pepper purée. Heat it up slowly in a "bain-marie".
