|  | American people call it BBQ, in the Basque country we call it “zikiro”, and it’s called “méchoui” in other countries. Don’t forget to try the shepherds Basque sauce or the Espelette pepper marinade sauce, we just love eating “bizia” (with life:spicy) in the Basque country.
In the Basque country, instead of roasting the meat horizontally above the flames, we put the animal on a spit planted into the ground. It’s a good way to stop the fats from dripping onto the ground and from burning with a big thick smoke. This is how, we, Basque people created the “Zikiro” and the”Baskarri bixia”
